In 1971, Craig returned to Washington County to work in his family's ranching business. His political journey began shortly thereafter when he joined the Idaho Army National Guard. In 1974, he successfully ran for a seat in the Idaho Senate, securing re-election in 1976 and 1978. His political career advanced further when he was elected to represent Idaho's 1st congressional district in the U.S. House of Representatives in 1980, a position he held for a decade.

Craig's ambitions led him to the U.S. Senate, where he served from 1991 to 2009 after defeating Ron J. Twilegar in the 1990 general election. He was re-elected in 1996 and 2002, solidifying his influence within the Republican Party. However, his career faced significant challenges following an arrest for indecent behavior in June 2007 at Minneapolis–St. Paul International Airport. This incident, which became public knowledge later, sparked controversy due to Craig's previous opposition to LGBT rights.

Despite initially announcing his resignation from the Senate effective September 30, 2007, Craig ultimately decided to complete his term, choosing not to seek re-election in 2008.
