Hailing from a Tuscan family, Giovannetti's journey in cycling began in his amateur years, where he showcased his talent by winning a gold medal in the Team Road Race at the 1984 Summer Olympics in Los Angeles, alongside teammates Claudio Vandelli, Marcello Bartalini, and Eros Poli.

Giovannetti's most notable triumph came in 1990 when he clinched the overall victory in the Vuelta a España. His decisive attack during stage six over the challenging Las Palomas mountain range propelled him into contention. Although he finished fifth on that stage, his competitors struggled, allowing him to ascend to second place. By stage eleven, he had taken the lead, ultimately defeating the defending champion, Pedro Delgado, and becoming only the fourth Italian to win this prestigious Spanish Grand Tour.
