Grouillard's ascent through the ranks of motorsport saw him excel in Formula Renault, where he clinched the championship title. He then transitioned to Formula 3000, competing from nineteen eighty-five to nineteen eighty-eight, achieving two notable victories. Although he participated in the Birmingham Superprix, he did not start the race, marking a unique moment in his early career.

In nineteen eighty-nine, Grouillard made his debut in Formula One with the Ligier team, later racing for Osella during the years nineteen ninety and nineteen ninety-one, when the team was rebranded as Fondmetal.
