Collymore's journey began after his release from Wolves' academy, leading him to non-league Stafford Rangers. His talent quickly caught the attention of Crystal Palace, who signed him in January 1991. However, after struggling to secure a first-team position, he moved to Southend United, where his impressive goal tally helped the team avoid relegation and ultimately earned him a transfer to Nottingham Forest in the summer of 1993 for two million two hundred fifty thousand pounds.

At Nottingham Forest, Collymore enjoyed a prolific spell, achieving promotion to the Premier League in his first season and finishing third in the league with twenty-two goals during the 1994-95 season.
